When you start working with mushrooms, they always need to be rinsed, never soaked. Pat them dry.
Then, put the pan over high heat. Don't use any oil.
Add the mushrooms. Continue moving them until they are golden brown, and water is visible. You can put them aside for later use.
This will help to enhance the mushroom's flavor and aroma.
